Mexican Hot Cocoa
One of my favorite things during the winter is Mexican Hot Cocoa. I like it very spicy and very chocolate-y and a vehicle for lots of mini marshmallows.
I really like using Tyler Florence's recipe as a guideline and then jazzing it up.
While the milk is warming, I make a little spice bag and add one or two dried chili peppers, a pinch of red pepper flakes, Saigon cinnamon (Costco has this in giant containers REALLY affordable!). Let the bag sit in the milk while it's cooking and the flavors will blend together. I love steeping milk with different flavors! (this is also how I make flavored yogurts) Of course you don't have to use a spice bag, you can just strain the milk afterwards but I'm lazy ;)
